Domaine de Fontsainte, Corbières, Réserve la Demoiselle, France, 2012
Okay, so winter has made its point already. We get it. Which is why, at Harper’s, we’ve exchanged a mind of winter for one of southern France. Specifically, we’ve taken to the Domaine de Fontsainte Corbières Réserve la Demoiselle. Sustainably made, this hearty blend of old vine Carignan (101 year old vines, in fact!), Grenache, and Mourvèdre, transports you back to the land of sun-baked herbs in which it’s made. With notes of dark fruit, coffee, cocoa, and garrigue, it’s a terrific pairing with both of our duck dishes, as well as the lamb.
